Breakfast Bento (118)

Upper Tier: English Muffin, Red Grapes. Lower Tier: Hash Browns, Over-hard Eggs, Pork Sausage Links.


Sometimes breakfast just sounds good but that is hardly ever first thing in the morning for me. I know it’s the most important meal of the day and helps maintain a healthy weight. Blah, blah, blah…

Sorry. Minor tangent. I really do try to eat something in the morning but my breakfast usually consists of fruit and/or yogurt and coffee. (Yes, I’ll admit that sometimes it’s just coffee.)

Today I wanted breakfast food so I decided to have it for lunch.

This ideal meal has a small portion of hash browns and sausage, one over-hard egg, half of an english muffin and some red grapes. Still a petite meal but enough to keep me going and it allows me to have these breakfast foods without feeling guilty about the calories and carbs.

I’ve tried other breakfast bentos before and am always happy with them. I think my favorite breakfast items for bento would be fritatta or crepes. What’s your favorite breakfast bento?

Linguini with Vodka Sauce (95)

Top Tier: Chamomile Teabag, Custard Cake, Tea & Honey Hard Candies, Pepperjack Cheese Wedge, Red Grapes. Bottom Tier: Linguini with Hot Italian Sausage and Vodka Sauce, Broccoli.


My daughter is a pasta fiend so when I ask her what she wants to eat it often involves pasta. She requested spaghetti and meatballs today but I had neither spaghetti nor any of my normally made-ahead frozen meatballs. Guess I’ll have to get some more made over the weekend!

Since I couldn’t fill her request I adjusted slightly and made linguini with vodka sauce. She likes it plain but for the rest of us some hot italian sausage was a good compliment.

The linguini is accompanied by steamed broccoli and I added red grapes, pepperjack cheese, a custard filled cake, chamomile teabag, and some tea and honey flavored hard candies to finish out this ideal meal.

Red Beans & Rice (61)

Red Beans & Rice with Smoked Sausage in casserole. Cherry Peppers stuffed with Cream Cheese, Olives, Babybel Cheese, Clementine, Small Bottle of Hot Sauce, Biscuit.


Today I had an appointment that I had been avoiding for awhile.

I had been having a variety of female issues over the past couple of years which resulted in increasing pain over the past six months.

I knew I needed to take care of it but never made the time because I assumed it would require surgery. Well, they say everything happens for a reason and I guess losing my job was what I needed to take care of myself.

After meeting with my doctor I really needed some comfort food so I put together this nice batch of red beans and rice. To this I added a side bento of olives, peppers, hot pepper sauce, cheese, and a biscuit to complete today’s ideal meal.

Not exactly a typical St Patty’s Day meal but really good for a day when I’m told I am having a hysterectomy next Tuesday. Keep me in your prayers and I’ll keep you up to date.

Brunch (52)

Mini Quiche Lorraine, Sausage Stars, Hashbrowns


Today I made a brunch bento since I was cooking for my husband before he went to work. (How strange to be home in the morning…)

My bento looks a little woozy which is kind of how I’ve been feeling lately too. I had been postponing a surgical procedure due to my hectic work schedule and now the increased stress of losing my job has caused additional complications.

The good news is that I have already scheduled a consult with the surgeon in hopes to get the surgery before starting a new job. My plan is to have sufficient time to get the surgery and properly recover (I’m told 4-6 weeks) just in time to find and begin a new job. This is probably asking a lot but I’m going to hope for the best and put my health first for a change. 🙂

This bento was simple and though I photographed the top tier it did not look very nice so I cropped it out.

The ideal meal included this tier with Mini Quiche Lorraine, breakfast sausage, and hashbrowns as well as a top tier with lemon yogurt and granola.

I do have an interview scheduled for this afternoon so please wish me luck!

Sausage & Peppers (10)

Fettucine Nest with tomatoes and marinara sauce (in mini container), Caesar Salad (dressing under tomato pick) Mandarin Oranges & Blueberries, Sausage & Peppers.


It’s funny sometimes what I can and can’t eat when I’m feeling stressed. I tried a ham and cheese wrap yesterday and the ham didn’t agree with me but sausage and peppers are fine! It makes no sense but I can’t say I’m disappointed in today’s great-tasting lunch.

I used another of my frozen pasta nests and combined that with some pre-made marinara. For protein I cooked up half of a Hot Italian Sausage link with some onions and red peppers. Yummy!

With the addition of a caesar salad and a cup of mandarin oranges and blueberries I have today’s Ideal Meal. So good and, BTW, relaxing to enjoy while realizing that this week will be much less stressful than last. 🙂
