Ham & Swiss Bento (125)

Ham and Swiss Sandwich, Pretz, Yogurt, Red Grapes, Pickles, Mini container of cream cheese for pretzels.

I have been running around a lot lately and have been forgetting my health in my rush to do other things. Does this happen to anyone else?

I found myself getting home late afternoon today and realized that I was starving!!! I mean really hungry, not that cutesy Winnie the Pooh grumbly-in-my-tumbly stuff. Then it hit me – I have not eaten yet and it’s 4:00! Bad, bad!!

So I threw together the quickest meal I could come up with that would offer a good amount of protein and headed out the door again.

This lunch is perfect for travel and I’ll be able to eat most of it while driving (not exactly the best habit but necessary today) without compromising safety.

The sandwich is a small french roll with ham, swiss cheese, lettuce, tomato, red onion, and mustard. (I took the insides out of the roll to reduce carbs and calories and make room for extra protein.)

Along with the sandwich I put in some pickle slices that ended up half on the sandwich and half as a munchie. I also have red grapes, butter flavored pretzels with cream cheese for dipping and a sweet-creamy Strawberry Shortcake yogurt.

Hogie Bento (121)

Blueberries, Strawberries, Carrot Chips, Buffalo/Ranch Doritos, Hogie with Salami, Ham & Provolone.

Oh my goodness! I forgot to publish my post this morning. I’m so sorry.

Well, it’s not too exciting but I did actually prepare a bento so here it is in all it’s yumminess. 😀

Today’s bento is great for another day of running around. This sandwich box holds quite a bit so I was able to get a good size hogie in here as well as some sides to balance out the meal.

The hogie has genoa salami, black forest ham, provolone cheese, lettuce, tomato, red onion, pepperoncini, and italian dressing.

To finish out this ideal meal I added some Buffalo/Ranch Doritos which I picked up at the register to use the last of a gift card the other day. (Have you ever had around $1 left on a gift card? I hate that!)

I also added some blueberries, strawberries, and carrots so it didn’t seem like such an unhealthy lunch.

Sub Sandwich Bento (115)

Sub Sandwich, Strawberry Shortcake Yogurt, Chocolate Wafer Cookie, Red Grape Pick, Pepperjack & Cheddar Cheese Sticks, Pickle Slices.

I’m going to be in the car a lot today so I need a lunch that will travel well and be easy to eat while on the go.

We had some sub rolls left in the house so I threw together a simple sub sandwich of turkey, ham, genoa salami, and american cheese.

Along with the sub I have a yogurt, some pickles, cheese, and red grapes. I’ll add a couple of bottles of water and more fruit to my lunch tote so I make it through the day without feeling like I’m starving!

Sandwich Bento (103)

Chicken Salad Sandwich, Egg Salad Sandwich, Ranch Dressing Cup, Baby Carrots, Red Grapes, Golden Oreos, Flatbread Cracker with Goat Cheese, Cherry Tomatoes.

Again with the warm weather food. If I keep this up I’ll be living on sandwiches and salads the whole summer!

Today’s bento is actually a couple of salads in sandwiches. I couldn’t decide which sounded better so I made both egg salad and chicken salad.

Along with the sandwiches I’ve added some baby carrots with ranch dressing, red grapes, a flatbread cracker with goat cheese, some cherry tomatoes, and a couple of golden oreos (those things are addictive!).

Another ideal meal for a nice warm day in sunny Arizona!

Now to decide…which comes first; the chicken or the egg?

Pork Bahn Mi (102)

I had some leftover pork chops the other day so I decided to slice them very thin and use them in bahn mi sandwiches for today’s lunch.

Bahn mi is a new favorite of mine which I first tried a few months ago at Lee’s Sandwiches in Chandler. That sandwich was a BBQ pork version which I really enjoyed though I haven’t yet tried to duplicate the sauce for the pork.

Today’s bahn mi has thinly sliced pork, mayo, sriracha, carrot, daikon, cilantro, and jalapeno.

Along with the sandwich I have some macaroni salad, juicy watermelon, zucchini and yellow squash with ranch dressing, and a cute stem pick for a couple of cherry tomatoes. Another ideal meal for our current warm temperatures!

Pulled Pork Sandwich (87)

Pulled Pork Sandwich, Pepper Jack Cheese Wedge, Butterfly Crackers, Red Grape Skewer, Chocolate Wafer Cookie.

Are you back to see what day two of the pork recipes was?

Day one of the big pork roast was a pork carnitas and today; day two, is pulled pork.

The pork was about half of the pork shoulder I shredded after slow cooking it the other day. To the meat I added a simple barbecue sauce with cayenne, red pepper, and tabasco to give it heat.

Today’s ideal meal is a sandwich featuring this BBQ pork, some cheese and crackers, red grapes, and a chocolate wafer cookie.

Mmm-mm. Good barbecue!

Chips & a Sandwich (80)

Sandwich, Chips & Yogurt. Simple But Tasty!

So I did the thing everyone told me not to do with respect to my surgical recovery. Ahem…”Don’t overdo it just because you feel better. Your insides will take a while to heal”. Blah, blah, blah. I feel great!

That was me yesterday. Today. I. Hurt.

Stupid!!! I have gone out over the past few days to run errands, look at a new house, shopping, etc. I even decided that I was feeling well enough to drive and spent a good portion of yesterday in the car. I am stupid to not listen to other people but I really did think that my body was telling me I was ready.

Oh well, at least I’m learning which brings me to the simplicity of today’s bento.

Chips, sandwich, yogurt. Need I say more?

Yummy and easy. Works for me!

Meatloaf Sandwich (77)

Spicy Meatloaf Sandwich, Strawberries, Thank You Berry Munch Cookie, Blueberries, Caesar Coleslaw.

Another speed bento today to keep down my time in the kitchen.

This bento features some leftover spicy meatloaf. The meatloaf has a little spice of it’s own from crushed red pepper, black pepper, and tabasco then I add pepperjack cheese and pepperoncini on the sandwich to give it even more kick. Yum!

Along with the sandwich I have a “Thank You Berry Munch” Girl Scout cookie, more strawberries and blueberries, a quickly prepared caesar coleslaw with green & purple cabbage, carrots, red onion, green & black olives and some caesar dressing.

An ideal meal for a relaxing Friday.

Ham & Swiss Wrap (74)

Ham & Swiss Wrap, Pickle & Olive Picks, Baked French Fries, Almond Joy Pieces.

Though I already posted my lunch bento I decided to make a dinner bento as well since I’ve got some leftover Easter ham to use.

This ideal meal begins with a wrap of black forest ham, swiss cheese, lettuce, tomato, avocado, and ranch dressing. The wrap is combined with olives, cornichon, baked maui onion french fries (these things are addictive!), and almond joy pieces.

Simply Delicious!

Deviled Ham Sandwich (72)

Deviled Ham Sandwich, Cheese Pick, Twix, Pineapple with Cinnamon, Tomatoes, Olive Pick

Sandwiches are some of the simplest and most satisfying meals. They can also bring back good childhood memories like this deviled ham sandwich does for me.

I remember the little cans of Deviled Ham that my grandma had in her cupboard when I was a child. When I wanted a special lunch, grandma would take out this treat and put it on plain white bread with mayo and a delicious sandwich was born.

This canned ham is still in the grocery stores and I see it on the shelf sometimes and think about picking some up just to relive this memory. Then I see the price. This stuff is crazy expensive! So it stays at the store and I still have the memory.

Well, this weekend we made a Black Forest Ham for Easter and there was quite a bit left so I put my husband to work chopping the ham super-fine and put together a nice deviled ham of my own.

The sandwich is combined with cheese and olive picks, tomato slices, pineapple with cinnamon, and a twix cookie to make today’s ideal meal.

Delicious and I think my deviled ham may be better than the stuff in the little can. My husband say so too! 🙂
