Tonkatsu & Crab Bento (123)

Today is a kind of cleanup as far as bento is concerned. I am trying to use up some of the items in the freezer so I took out the last of my egg sheets, imitation crab claws, and boneless pork chops.

The chops were a nice thin cut that lent itself nicely to tonkatsu. Tonkatsu is basically a breaded, fried pork chop which I made by seasoning the chops with salt and pepper, dipping in egg then coating with panko. I fried them in sesame oil till nicely browned and then cooked up some cabbage and rice to go with it.

Finishing out this ideal meal is a beggars purse filled with a spicy crab mixture, a couple of imitation crab claws and some pears drizzled with chocolate sauce. Delicious!!

Pizza Roll-ups (107)

Pizza Roll-ups, Spicy Chicken Nuggets, Pepper Jack Cheese Wedge, Cinnamon Almonds, Cherry Tomatoes, Red Grapes.


Today’s meal is a combination that any kid would likely love – pizza and chicken nuggets. (Sorry Jamie Oliver!).

The pizza roll-ups are actually a regular slice of pizza that was rolled tightly from the narrow end and cooled in the freezer to make it easy to slice.

To this I’ve added a couple of spicy chicken nuggets, a pepper jack cheese wedge, cherry tomatoes, and red grapes as well as some cinnamon almonds (for which I will try to compile a recipe next time I make them).

One more day until the long weekend. Yay!

Pork Bahn Mi (102)

I had some leftover pork chops the other day so I decided to slice them very thin and use them in bahn mi sandwiches for today’s lunch.

Bahn mi is a new favorite of mine which I first tried a few months ago at Lee’s Sandwiches in Chandler. That sandwich was a BBQ pork version which I really enjoyed though I haven’t yet tried to duplicate the sauce for the pork.

Today’s bahn mi has thinly sliced pork, mayo, sriracha, carrot, daikon, cilantro, and jalapeno.

Along with the sandwich I have some macaroni salad, juicy watermelon, zucchini and yellow squash with ranch dressing, and a cute stem pick for a couple of cherry tomatoes. Another ideal meal for our current warm temperatures!

Pork Chop & Garlic Mashed Potatoes (101)

I was excited to hit my one hundredth bento yesterday and am hoping other people may be interested in a contest to celebrate. If you didn’t see bento 100 please take a look and comment. Once that bento reaches twenty comments I will post my first contest so don’t miss out!

Today’s bento is a celebration of Spring. Flowers are throughout the bento in the vegetables, fruits, and even the mashed potatoes!

The main course is grilled pork chops with garlic mashed potatoes. To this I have added flowers of carrot, yellow squash, tomato, and bologna. On the top tier I have olives, red peppers stuffed with herb cream cheese, kiwi, orange segments, and more flowers – this time using melon.

Linguini with Vodka Sauce (95)

My daughter is a pasta fiend so when I ask her what she wants to eat it often involves pasta. She requested spaghetti and meatballs today but I had neither spaghetti nor any of my normally made-ahead frozen meatballs. Guess I’ll have to get some more made over the weekend!

Since I couldn’t fill her request I adjusted slightly and made linguini with vodka sauce. She likes it plain but for the rest of us some hot italian sausage was a good compliment.

The linguini is accompanied by steamed broccoli and I added red grapes, pepperjack cheese, a custard filled cake, chamomile teabag, and some tea and honey flavored hard candies to finish out this ideal meal.

Pulled Pork Sandwich (87)

Day one of the big pork roast was a pork carnitas and today; day two, is pulled pork.

The pork was about half of the pork shoulder I shredded after slow cooking it the other day. To the meat I added a simple barbecue sauce with cayenne, red pepper, and tabasco to give it heat.

Today’s ideal meal is a sandwich featuring this BBQ pork, some cheese and crackers, red grapes, and a chocolate wafer cookie.

Mmm-mm. Good barbecue!

Carnitas & Rice (86)

I got a great deal on a pork shoulder roast so cooked that in the slow cooker the other night and shredded all the meat. The roast was so big that I was able to make two full dinners with it plus plenty of leftovers.

The first meal I made with the pork was carnitas. Carnitas is a Mexican dish which is basically roasted shredded pork. It is frequently used in tacos or burritos.

My carnitas was made by combining onion, garlic, pepper, cumin, cilantro, and lime juice with the pork and some of the juice from the slow-cooker. This is cooked stovetop until the flavors combine and the meat is to your liking. (I like it just cooked through but some like it a little more crisp.)

The carnitas in today’s bento is served over cilantro-lime rice rather than in tortillas. This ideal meal also has a tier of fruit and cheese and I added some chips and salsa at mealtime though that was an after-thought and is not in the photo.

Meatloaf Sandwich (77)

Spicy Meatloaf Sandwich, Strawberries, Thank You Berry Munch Cookie, Blueberries, Caesar Coleslaw.


Another speed bento today to keep down my time in the kitchen.

This bento features some leftover spicy meatloaf. The meatloaf has a little spice of it’s own from crushed red pepper, black pepper, and tabasco then I add pepperjack cheese and pepperoncini on the sandwich to give it even more kick. Yum!

Along with the sandwich I have a “Thank You Berry Munch” Girl Scout cookie, more strawberries and blueberries, a quickly prepared caesar coleslaw with green & purple cabbage, carrots, red onion, green & black olives and some caesar dressing.

An ideal meal for a relaxing Friday.

Smoked Sausage, Onions, & Cabbage (75)

Today’s bento includes smoked sausage cooked with onions over cooked cabbage.

To get some extra protein I have a couple of slices of a ham, swiss, and chive tamagoyaki and have finished off this ideal meal with a HUGE strawberry and a few blueberries. (Finally got to the grocery store for some fresh produce, yay!)

I had a little setback in my surgical recovery so I’m trying to spend a little less time on my feet. That makes this a quick bento both in the preparation and the posting.

Hungry Man Bento (73)

I was disappointed in the way my bento looked today so I chose instead to feature my husband’s lunch.

My husband dubbed this the “Hungry Man Bento” and it is definitely a big serving for my hungry man.

This meal includes two baked pork chops, stuffing, mashed potatoes with pork gravy (including bits of cooked pork), and his favorite vegetable – brussel sprouts.

My ideal meal included a much smaller
portion of these items as well as a banana.
