White Peach, Little Debbie Petite Chocolate Cake, Seasoned Ground Beef, Tortilla Chips, Hot Sauce, Mixed Greens with Shredded Cheese and Chopped Tomatoes.


Some of my favorite meals are salads and warmer weather encourages me to make a variety of these tasty meals.

Today’s ideal meal is a taco salad made of mixed greens, tomato, cheese, tortilla chips, and ground beef (kept separate to warm at lunchtime). In addition, I’ve added a white peach and a new Little Debbie Petite Cake in chocolate. A simple and tasty way to end the workweek. 🙂

Summer officially kicks off with this being Memorial Day weekend and many people enjoying an extended weekend. Break out those barbecue grills and have a great time with family!

Pizza Roll-ups (107)

Pizza Roll-ups, Spicy Chicken Nuggets, Pepper Jack Cheese Wedge, Cinnamon Almonds, Cherry Tomatoes, Red Grapes.


Today’s meal is a combination that any kid would likely love – pizza and chicken nuggets. (Sorry Jamie Oliver!).

The pizza roll-ups are actually a regular slice of pizza that was rolled tightly from the narrow end and cooled in the freezer to make it easy to slice.

To this I’ve added a couple of spicy chicken nuggets, a pepper jack cheese wedge, cherry tomatoes, and red grapes as well as some cinnamon almonds (for which I will try to compile a recipe next time I make them).

One more day until the long weekend. Yay!

Teriyaki Tofu Bento (106)

Top Tier: Champagne Mango, Red Grapes, Blackberries, Kiwi, Little Debbie Petite Yellow Cake. Bottom Tier: Crispy Teriyaki Tofu, Baby Carrots, Teriyaki Noodles, Red Onion, Zucchini and Yellow Squash.


I am so excited to tell you that I have found more flavors of Little Debbie Petite cakes!

I first tried these petite treats late last year when Little Debbie introduced the Petite Red Velvet cakes. Since then they have been in many bentos and I have had a lot of people ask me about them. I’ve always told people how much I like the cakes though I was disappointed that they were only available in one flavor… Until now.

I am happy to report that Little Debbie has introduced four new flavors: Chocolate, Spice, Strawberry, and Yellow.

I have found two of these new flavors locally (and am on the hunt for others) and have one in today’s bento. If you haven’t tried them yet, they are perfect for bentos. Small in size, low in calories, and big on deliciousness! Yum!!

Though I’m most excited about the Petite there is a nice balance of other items in today’s ideal meal as well. 🙂

The main course is crispy tofu with onions, zucchini, and yellow squash all cooked in a teriyaki sauce. Alongside the tofu I have teriyaki noodles and on the top tier is the fabulous Little Debbie Petite Cake as well as a variety of fresh fruit.

Steak Bento (105)

Top Tier: Carrot Cake, Apricot, White Peach Slices, Red Grapes. Bottom Tier: Corn on the Cob, Baby Carrots, Sirloin with Steak Sauce.


Today’s bento is leftovers from one of my husband’s favorite meals. Steak and potatoes! Ok, so there’s no potatoes. But that’s only because my husband loves them so much.

My husband is a corn-fed Iowa boy. And in traditional form he can eat a whole field (ok, bushel) of corn by himself and he loves his meat and potatoes. If I didn’t sneak half an ear of corn before dinner I never would have gotten that into the box either!

The steak is a lean sirloin topped with a little A-1. This is accompanied by corn and baby carrots, both of which are so fresh and sweet. Yum!

To finish off this ideal meal I have a some white peach slices, red grapes, an apricot, and a small piece of carrot cake. Where do I start?!

Shrimp Taco Bento (104)

Top Tier: Chips & Salsa. Bottom Tier: Shrimp Taco (In the front), mini cup of chipotle sauce, picked carrots & jalapenos, pinto beans & Spanish rice with heart spork.


No sandwich today! I know I’ve been doing a lot of sandwiches so I decided to actually cook today. 😀

This bento features a Shrimp Taco. The shrimp is grilled with lime, cilantro, and tomato juice then placed in a corn tortilla with some shredded lettuce and cheese. To top the taco I made a chipotle cream sauce and I’ve added rice and beans to be eaten on the side or they can be added to the taco, if preferred. The pickled jalapenos and carrots make for a nice kick as well as upping the veggies in this bento!

To finish off today’s ideal meal I have some chips and salsa and since I didn’t make room for fruit I took along an apple and orange for snacks.

Sandwich Bento (103)

Chicken Salad Sandwich, Egg Salad Sandwich, Ranch Dressing Cup, Baby Carrots, Red Grapes, Golden Oreos, Flatbread Cracker with Goat Cheese, Cherry Tomatoes.


Again with the warm weather food. If I keep this up I’ll be living on sandwiches and salads the whole summer!

Today’s bento is actually a couple of salads in sandwiches. I couldn’t decide which sounded better so I made both egg salad and chicken salad.

Along with the sandwiches I’ve added some baby carrots with ranch dressing, red grapes, a flatbread cracker with goat cheese, some cherry tomatoes, and a couple of golden oreos (those things are addictive!).

Another ideal meal for a nice warm day in sunny Arizona!

Now to decide…which comes first; the chicken or the egg?

Pork Bahn Mi (102)

I had some leftover pork chops the other day so I decided to slice them very thin and use them in bahn mi sandwiches for today’s lunch.

Bahn mi is a new favorite of mine which I first tried a few months ago at Lee’s Sandwiches in Chandler. That sandwich was a BBQ pork version which I really enjoyed though I haven’t yet tried to duplicate the sauce for the pork.

Today’s bahn mi has thinly sliced pork, mayo, sriracha, carrot, daikon, cilantro, and jalapeno.

Along with the sandwich I have some macaroni salad, juicy watermelon, zucchini and yellow squash with ranch dressing, and a cute stem pick for a couple of cherry tomatoes. Another ideal meal for our current warm temperatures!

Pork Chop & Garlic Mashed Potatoes (101)

Top Tier: Olives, Red Peppers stuffed with herb cream cheese, kiwi, orange segments, melon flowers. Bottom tier: Pork Chop, Flower Shaped Garlic Mashed Potatoes, Flowers of Carrot, Yellow Squash, Tomato, and Bologna.

Today’s bento is a celebration of Spring. Flowers are throughout the bento in the vegetables, fruits, and even the mashed potatoes!

The main course is grilled pork chops with garlic mashed potatoes. To this I have added flowers of carrot, yellow squash, tomato, and bologna. On the top tier I have olives, red peppers stuffed with herb cream cheese, kiwi, orange segments, and more flowers – this time using melon.

Cobb Salad Bento (100)

Cobb salad with olive & tomato picks, cucumber, egg, chicken, avocado, bleu cheese, and bacon. Pepper jack cheese wedge, crackers, strawberrries & blackberries to complete the meal.


Sometimes the weather warrants a salad and our temperatures over the weekend were in the upper nineties. Definitely time for a salad!

This is a basic cobb salad with grilled chicken, hard-boiled egg, avocado, bacon, bleu cheese, olive, tomato and cucumber on a bed of mixed greens. I’ve also added some fresh fruit as well as crackers and cheese to round out this ideal meal.

In case you didn’t notice on the title today’s bento is my hundredth posting. I can’t believe that went so quickly!

I have been thinking about doing a contest to celebrate this milestone and have decided that if I get twenty comments on this post I will add a contest to celebrate.

Bento 100 MIA?

I haven’t posted in a couple of days since I have had a setback in my surgical recovery and am back in bed for a few days. I am trying to behave (my husband is quite insistent :)) and hope to be back on Monday with my 100th bento!
