Cheese Enchilada over Spanish Rice, Black Beans, Cucumber, Blueberries, Kiwi, Mango

A favorite make-ahead meal in our house is enchiladas. Whenever I make them I make an extra pan to freeze for a later meal making it easy for anyone to pop them in the oven for dinner on a busy day.

Today’s bento features cheese enchiladas over spanish rice. Additional protein is easy with some seasoned black beans and I’ve finished off this ideal meal with some fresh fruit and cucumber slices.
