Soup & Sandwich (49)

Egg Salad Pita, Petite Red Velvet Cake, Clementine, Cherry Tomatoes, and a Thermos of Tortilla Soup.


The weather here has been pretty cool and overcast this week and they’re calling for rain this weekend. Perfect weather for curling up with a good book and a cup of tea. Or going to work and having some soup. (Not as great but still nice with the cool weather.)

One of my favorite soups is Chicken Tortilla. Simple to make and so full of flavor. It’s also great because different tastes can be pleased by putting on their choice of toppings. In this case, my soup has tortilla strips, cheddar cheese, and cilantro.

I’ve also added a little extra protein with an egg salad pita. This ideal meal is finished off with some fruit and a small dessert. Delicious!

Mini Pita Pizza (48)

Have you ever had the feeling that your head may explode? This is how I felt Wednesday as I left work.

I’m fighting a bit of a cold and the idea of having to cook anything for dinner or plan for lunch was not at all of interest to me. Fortunately I always have items on-hand to make a salad so I headed home to make a basic chicken caesar for dinner.

Once home I noticed a package of mini pitas I had bought the other day thinking they would be great for bento use. I decided to make use of the pitas and put them in the toaster oven to brown while assembling my salad.

Once browned the pitas were brought out of the oven. Some were topped with garlic and butter and put back in the oven for additional toasting as a side for my salad. The rest were made into pizza for Thursday’s lunch.

To make the pizza, I added a basic blend of tomato sauce, italian seasonings, garlic, and onions to the pre-toasted pitas. I then topped them with shredded mozzarella, mini pepperoni, and parsley. Back into the oven they they went until the cheese was bubbly.

These mini pizzas are combined with a simple salad to make today’s ideal meal. Nom, nom! 🙂

Machaca Burrito (47)

Refried Beans, Spicy Chicken Fried Rice, Machaca Burrito, Cherry Tomatoes.


Yesterday’s cheese enchiladas were so good that I decided to make more Mexican food today.

The crockpot was cooking a nice hunk of beef all day. The meat basically fell apart and I just had to add some salsa to finish off my machaca (spicy shredded beef).

For this bento I made a machaca burrito. The burrito was joined by some refried beans and some spicy chicken fried rice for today’s ideal meal. Yum! 🙂

Cheese Enchilada (46)

I finally got my cheese enchiladas made after buying a new pan at the end of last week.

Getting home earlier than usual, I immediately called my daughter into the kitchen and we made two pans of enchiladas. One for dinner and another smaller one for lunches.

Assembly took only about 30 minutes. Another 30 minutes in the oven while preparing sides of spicy black beans and fideo with green onions, red peppers, and a spicy tomato sauce.

The enchiladas were delicious, as was the rest of the meal and I am happy to take a little of each for Tuesday’s ideal meal.

Grilled Talapia (45)

Today was to be a short day for me so I made a simple meal with grilled fish pieces along with steamed veggies and fresh fruit.

This was definitely an ideal meal for a short workday as it didn’t have a lot of protein like I normally pack on my longer days.

This was really a tasty and healthy meal though I have to admit I was hungry again within a couple of hours. It also was not such a short day afterall so I was glad to get home and finally make the cheese enchiladas I’ve been wanting since last week. You’ll see those packed tomorrow. 😀

Panda Express (44)

Today’s lunch is brought to you by the good people of Panda Express. Ok, not really. It is however cooked by the good people of Panda Express. 🙂

I managed to leave work before the sun was down last night. My daughter needed to return something to the mall and convinced me to take her so she could have her money back in her pocket for about thirty seconds. Why do teenagers love the mall so much?

While at the mall we made a stop in the Disney store and happened upon some great little bento boxes that I will try to post in the next couple of days. Handy Manny, Fairies, Princesses, Pooh Bear. Some as low as $1.99! Totally worth the trip to the mall in my opinion.

To celebrate our great find we decided to stay for dinner in the Food Court. (Another one of those things that is great when you’re a teenager but not so great as an adult.) Luckily, my daughter likes Panda Express which seems a little more healthy than the other options. I ordered a combo which provided not only my dinner but also my lunch today as well as lunch for my husband. Wow, they put a lot of food in those to-go containers!

My only addition to the Panda Express lunch was the gummy penguins. I didn’t even bring fruit – Oops! Well, maybe not an ideal meal but tasty anyway.

Black Pepper Salmon (43)

Convenience has been a high-priority this week and this bento is yet another example of what can be done in a short amount of time.

On a quick trip to the market I found some beautifully seasoned salmon and picked up a couple of pieces. Today’s bento features a cracked black pepper salmon as well as a southwestern pasta salad and some salad bar olives and peppers from the same trip. I love Sunflower Market!

All of these market finds combined with some fresh fruit and veggies to make today’s ideal meal.

Chicken Fajita Salad (42)

Grilled Chicken and Onions, Guacamole, Pico de Gallo, Sour Cream, Jalapenos, Carrots, and Lime Wedges all on a bed of lettuce.


I have been wanting enchiladas for a few days so decided to make a batch of gooey, cheesy enchiladas for dinner. My husband was home so I made him come out to the kitchen to grate cheese so I could make sauce and prep tortillas.

I go to the cupboard to take out my 9 x 13 pan and much to my surprise I don’t have one. What? I’ve had at least a couple of these for all of my adult life. Where have they gone? My husband blames the kids, my daughter has no idea, and my son is now married with his own worries so I won’t harrass him about it. Bottom line – no pan to make enchiladas.

Now, a sane person would just use a couple of smaller pans or even make individual portions. I am not sane. I am seriously OCD and can’t possibly make enchiladas in anything but a 9×13 pan.

All of this is to say that I have fast food mexican leftovers in today’s bento. My husband was thrilled to get out of any type of kitchen duty, by the way.

Maybe I can pick up a pan tomorrow and try again for my desired enchiladas…

Teriyaki Meatballs (41)

In the mood for something different I decided to try some teriyaki meatballs with store bought onigiri. Note to self: Making onigiri is not so time-consuming that giving up flavor in favor of bland, dry frozen food options is preferred.

That said, this meal was able to be a time-saver which has been more important lately. In addition, I was able to add some special touches with caviar and one of the lovely truffles my husband gave me for Valentine’s Day.

Overall, not my favorite meal but ideal for a day when time was at a premium and I still wanted to make good food-choices.

Shrimp & Wild Rice (40)

I’ve been on a bit of a seafood kick lately though this bento clears the shrimp out of the house. I guess I’ll have to figure out something else for the balance of the week. 🙂

Today’s bento is a nice light lunch with grilled shrimp over wild rice and a little broccoli. The top tier is a blend of green and red grapes and a leftover Valentine mini brownie. An ideal meal for the beginning of the workweek.
