Pork Banh Mi (15)

Pork Banh Mi, Pita Chips, Little Debbie Petite Red Velvet Cake

Today’s bento was a very simple sandwich again. I have seen many other blogs talking about the fantastic “Banh mi” sandwich so finally decided to try one myself. Such a great meal! A nice baguette with slow-cooked pork, a bit of pickled daikon and carrot, topped off with a little mayo and cilantro. Yum!

It was a good size sandwich so I didn’t need to add much though I had just enough room to add one of the new Little Debbie Mini Red Velvet Cake and a few pita chips.

This all went into a sandwich bento and was combined with a Diet Wild Cherry Pepsi and naval orange. Into a simple lime-green insulated lunch bag went today’s Ideal Meal.

The banh mi, by the way, was so wonderful I’m ready to make more in other varieties. What’s your favorite?
